BLACK PEPPER FROM MADAGASCAR

Black pepper is the dried fruit of Piper nigrum, a tropical vine cultivated in the wetlands of eastern Madagascar.
 

Clusters of pepper are harvested just before maturity, when the grains are still green. They are then naturally dried in the sun, which gives them their characteristic brown-black color and concentrates their essential oils.


Malagasy black pepper is distinguished by:

  • A marked aromatic intensity, both woody, fruity and slightly lemony.
     

  • A moderate heat, which lifts the dishes without masking them.
     

  • A high content of piperine, responsible for its flavor and natural qualities.

Origin and know-how - Madagascar

Our black peppers come mainly from the eastern and northeastern regions of Madagascar, where climatic conditions (regular rains and tropical heat) favor a slow and homogeneous maturation of the grains.


The harvest is done by hand, then the bunches are dried in the sun on woven mats, according to traditional methods.
 

This artisanal process preserves the natural scent and aromatic power of pepper. Careful sorting ensures the purity and consistency of lots destined for export.
