PINK PEPPERCORN FROM MADAGASCAR

Pink peppercorn comes from Schinus terebinthifolius, a tree native to South America, which has perfectly adapted to the tropical conditions of Madagascar.

Unlike black pepper, it is not a real pepper berry, but a dry fruit with a delicate scent, recognizable by its bright pink-red color.

Its taste is light, sweet and fragrant, with a spicy touch on the finish. It does not sting like pepper, which makes it an ideal spice to spice up dishes without overpowering them.

Uses

Pink peppercorn is highly appreciated in gastronomy for its finesse and versatility:

In the kitchen

  • Identify the fish, seafood, and white meat dishes.

  • Can be used in light sauces, dressings and marinades.

  • Perfect in fresh cheeses, fruity desserts or chocolate, where it brings a floral and subtle peppery note.

 In the professional cooking

  • In Canada and the United States, pink peppercorns are often used by chefs, caterers and processors to create original and high-end recipes: perfumed oils, spice blends, artisanal condiments or gourmet products.

Origin and know-how - Madagascar

Our pink peppercorn are harvested in coastal areas of Madagascar, where the humid tropical climate favors their natural development.

The harvest is done manually, then the fruits are dried in the sun to preserve their bright color and fragile aroma.

A rigorous sorting is carried out to eliminate impurities and preserve only the most beautiful peppercorn.

This artisanal method ensures an authentic spice, untreated, and compliant with export standards to markets in Canada and the United States.
